Rustic Italian Soup Mix

Directions:
1) In large pot, brown 1 chopped onion and 1 C chopped zucchini.

2) Pinch bag below noodles, pour noodles into a bowl and set aside.

3) Add remaining package contents and 10-12 C of water to pot; boil and simmer covered until cooked, (approx 2 hr).

4) In the last 15 min of cooking, add 1 package cooked, chopped bacon, 796 ml can diced tomatoes, 2 C spinach, and noodles. Season with salt and pepper.

Garnish with parmesan cheese.

INGREDIENTS FIELD HARVESTED. INSPECT FOR ELEMENTS OF NATURE.

Add 1 C diced onion, 1 C chopped zucchini and 2 TBSP olive oil to your pot and sauté with lid off for 5-7 minutes until onion is translucent. 

OPTION: you can substitute red or green pepper for zucchini. 

Pinch bag just below the noodles & empty them into a bowl to save for adding closer to the end of the cooking time.

Add remaining package contents and 10 C water. Secure lid and close vent. Set to SOUP for 30 minutes. 
Quick Release.

Add 1 package cooked and chopped bacon or cooked chopped sausage, with 2 C spinach and one 796 mL can of tomatoes as well as the pasta you reserved. 

Secure lid and close vent and set to SOUP for 4 minutes. Quick Release and enjoy!
