Irish Beef Stew Mix
Remember the stick-to-your-bones, meat-and-potatoes meals of childhood? This is one of them, thick and hearty with beef, potato and parsnip. And in Irish fashion, we recommend you have stout beer on hand for this recipe. Optional? Yes. Delicious? Yes. All of the flavour, none of the alcohol.

1) In large pot, combine 2 tbsp oil, 1 large chopped onion, 1-2 lbs cubed beef. Cook until beef is browned.
2) Add 1 C chopped carrot, 1-2 C chopped parsnip, 4-5 cubed potatoes, package contents, and 8 C water. Bring to a boil and simmer covered for 90 mins, adding water if needed.
Option: Add ½ C stout beer, stir and simmer for 15 mins with no lid.
INGREDIENTS FIELD HARVESTED. INSPECT FOR ELEMENTS OF NATURE.
Add 1 chopped onion, 2 TBSP oil and 1-2 LBS stew meat to your Instant Pot and set to sauté. Stir with lid off for 10 minutes until meat is browned.
Hit cancel, add 8 C water, package contents, 1 C chopped carrots, 1 C chopped parsnip, and 4-5 diced potatoes.
Secure lid and close vent. Set to SOUP for 25 minutes.
Quick Release and enjoy!
OPTION: add 1/2 C stout beer and stir well.

1 - 2 lbs cubed beef

1/2 C of stout beer
